Does anyone have a fail proof recipe for scones? All of mine end up like Hockey pucks!?
I'm talkinmg about traditional English scones you have with jam and cream I think you in the U.S call them biscuits.
The usual cause of this problem is rolling them too thin. Using a serrated pastry cutter helps them to rise.
There are many recipes for scones, and the definition of 'scone' differs depending where you are.
I make fruit scones every week. Very simple.
12 oz self raising flour, pinch salt, rub in butter to consistency of breadcrumbs, add sultanas to taste, mix in milk to dough consistency.
Most recipes warn against over kneading, but I've found kneading helps them rise. Then roll out to 3/4 inch thick.
Cut into rounds with pastry cutter, place on baking tray and put in oven at temp of 200C for about 20 mins.
Devour....
